Method

  1. 01

Fill a tall glass to the top with ice and stir briefly to chill the glass. Pour off any meltwater.

  2. 02

Add the yuzu juice, syrup and gin, if using.

  3. 03

Top slowly with cold tonic water, pouring down the side of the glass to keep the bubbles.

  4. 04

Stir once, gently, from the bottom. Twist the peel over the glass to release its oils, then drop it in.

Flavor Notes

Floral and bittersweet. The quinine in the tonic frames yuzu's mandarin-like perfume; without gin, it becomes a refreshing, grown-up soda.

Good to Know

  • Bottled yuzu juice varies in strength and some brands contain salt — taste and adjust the syrup.
  • For an alcohol-free version, simply leave out the gin and add an extra splash of tonic.
